If you haven’t been to Michelin-starred institution The Song of India, drop what you’re doing and make a booking for its special Deepavali menu – the festive degustation is one amazing introduction to Chef Manjunath Mural’s fine dining approach to Indian cuisine. The Song of India’s Deepavali feast is four courses, including an ‘art palette’ with seven different tastings, and star dishes that seamlessly blend Singaporean elements with classic Indian techniques – it’s Chef Mural’s signature move to weave local flavours into his menus. We’re still thinking about the Sambal Barramundi Tikka and Char grilled Laksa Chicken Kebab, and frankly, even after all those courses you’ll find room for the amazing breads and a round of desserts.
